My husband works at the mall...

....so I took advantage and I'm spending the next few hours in Barnes & Noble.

To be honest, I thought it would be a good idea....have all this time in such a wonderful place. But, I'm bored. I've pinterested, facebooked, and hulued since 3:30. But, its better than being home alone on a Saturday night. I don't feel like such a loser being here....

I have a red eye....I'm slightly concerned (but not concerned enough to go to the doctor or actually take any productive action).
I couldn't smile or anything cause the people at B&N would think I'm a wierdo
Enrique Iglesias is a great workout partner. Euphoria, check it out. On that note- paying for a gym membership is a great way to motivate yourself. Also, there are less snobby girls and less dress code at Anytime Fitness. I like my Under Armor tops.

I bought a maxi skirt at a maxi skirt party. I kind of love it.
If I was rich I would own a maxi skirt in every color and wear one every day.

Facelift

I am so so so excited about the new look here! The amazingly beautiful and talented Hailey was kind enough to do it for me, which is convenient for me considering I am totally lost when it comes to any sort of graphic design.
Also, my husband is back! It is nice to have him back home with me- even though he was only gone for two days. I am much happier when he is around. 
Anyway, I hope you all are enjoying your weekend!

This past week my best friend Rachel was here! It was her fall break and due to her husband being at basic training she opted for a change of scenery and headed up to Rexburg for a little visit. It was so great to have one of my best friends with me for an extended period of time; I probably hadn't spent that much time with a friend in a long time. It was great to have some quality girl time!

Rachel got married a month and a half ago. She is my first close high school friend to get married and it was cool to chat about married people things. After being married for over a year, things get a little routine. Listening to her talk about the first 30 days of her marriage (that is all she and her hubby got before he had to leave....I don't know how she does it!!) really motivated me to think outside the box and helped me come up with some ideas to show Chris my love for him in different ways. Outside opinions can be so great (within reason of course).

I've been brainstorming over the past couple of days....stay tuned ;)

And the stars align...

For those of you around town wondering why we've been driving 3 different cars in a week in a half, here's why....

I hate car shopping; its the worst, I would rather go to the dentist or be on my period. Chris loves it.

My sweet husband was driving to his (6:30am) morning class and our Camry broke town. Luckily, he is friends with a car dealer in town and was able to call him and have our car towed (he did it for free, too!) and taken to the dealers mechanic. We got some bad news: the Camry needed over a thousand dollars worth of repairs. We got some good news: our dealer-friend had a client who was dying to get a Camry the exact color/make/model/year that ours was. He offered us a trade on any vehicle on his lot in exchange for our car. We were happy to do this, not wanting to deal with extensive car repairs.

However, there was nothing on the lot that fit what we were wanting/needing in a vehicle. We took the closet thing possible...a 2002 BMW SUV (in car lingo it's called an X5). It was a great car....very nice and luxurious but just too expensive for us to maintain and it had over 110,000 miles on it, so we decided to try our luck on KSL to try and sell it. We weren't expecting to have it sell right away, or have anyone willing to pay what we were asking for it. We were wrong. We had an extremely interested buyer call us two days after the ad was up. Before we knew it we were in a parking lot making the deal; getting our asking price and all!

Well, we were down to one car...which wasn't ideal with our crazy schedules. We decided to start looking again to see what we could find in our price range. Long story short....we found my dream car: a Toyota Rav 4- still under warranty! I was in love and wanted the car so badly. We went in to make an offer and found out that the car was a lot newer than we thought and out of our price range. (Enter Chris the Magical Buyer and Seller:) After some wheeling and dealing and lots of number talk we were signing papers and were owners of the Rav 4 with money in our budget to spare!

In short, we (especially me) couldn't be happier. It was crazy to see how everything worked out in such a timely manner; our school and work schedules remained virtually uninterrupted. We were able to get out of a car we couldn't afford and into a car we wanted and would be reliable for us. There is no way all of this happened by chance: we're calling it divine intervention. We are so blessed and couldn't be happier!

Ramblings of an overwhelmed college student...

Everyone is sick of me talking about how much homework I had/have/will have. I get it. But I am not sick of talking about it; it makes me feel better. Sucks for you guys.

My history professor wants me to watch The Odyssey. Which is 3 hours long. Normally, I wouldn't mind so much....but I don't have internet at home, which means I have to watch it at school...wearing clothes and makeup and such. Also, I watched it with Chris and did the EXACT SAME ASSIGNMENT two years ago when we were dating. Boo. Children, this is why you keep all of your assignments your whole college career....you never know when your wife might need them.

(**For those of you who think using his assignment would make me a big cheater, you would normally be right, however....I sat through the whole movie and filled out Chris' entire worksheet. So, if anyone is a big cheater it's him.**)

Lately, I have been clenching my jaw while reading. Homework requires an inhuman amount of reading. My jaw hurts constantly. Anyone have any tricks for stopping unwanted subconscious jaw clenching?

Zupa's Tomato Soup

This is the closet thing I've tasted to the real deal. Idaho seriously needs a Zupas, but for those of you also far away from one....here is something to ease your suffering.

Ingredients:
-4 lb. tomatoes, halved lengthwise :: apparently plum tomatoes make the flavor even better, but I just used normal tomatoes and it was still awesome
-6-8 garlic cloves, left unpeeled :: I just use one bunch, which usually yields about 10 cloves
-3 tbsp. olive oil
-½ tsp salt
-¼ tsp black pepper
-1 medium onion, finely chopped
-2 tsp fresh oregano, minced (only ½ tsp if using dried) :: I like more spices so I just add to taste
-2 Tbsp. fresh basil, minced (only 1 tsp if using dried)
-2 tsp sugar
-2 Tbsp unsalted butter
-3 cups chicken stock or low-sodium broth
-¾ cup heavy cream :: you don't need this...I use maybe a tablespoon
Directions:
Phase One
1. Put oven rack in middle position and preheat to 350.
2. Cut all stems off tomatoes, and cut in half lengthwise. Arrange tomatoes, cut sides up, in one layer on a large shallow baking pan and add garlic to the pan.
3. Drizzle tomatoes with oil and sprinkle with salt and pepper.
4. Roast in oven for 1 hour, then cool in pan on rack.


Phase Two
5. While that is cooling, cook onion, oregano, basil, and sugar in butter in a 6-8 qt pot over moderately low, stirring frequently, until onion is softened (about 5 min).

Phase Three
6. Peel garlic (should squeeze right out)
7. Add tomatoes, garlic, and stock and simmer covered for 20 min.
Phase Four
8. Puree soup in batches in a blender
9. Force through a sieve - I used just a normal strainer and it was fine- into a clean pot.
10. Stir in cream, and salt & pepper to taste
11. Simmer 2 min.

I usually make this on Sunday or Monday to eat for lunches during the week. According to MyFitnessPal, a fourth of this soup is only 250 calories!
I hope you all like it as much as I do...I just made my third batch in 3 weeks.
